Gluten Free Sponge Cake

Mum made a gluten free sponge for her birthday today and decorated it with fresh fruit and cream.   Delicious served with apricot sauce and extra Collie blueberries.

5 eggs
1/2 cup caster sugar
1 1/4 cups cornflour
1/2 teaspoon baking powder
Line baking tins with baking paper bottom and sides.
Preheat oven to 180 degrees.
Sift cornflour and baking powder twice.
Beat eggs till light in colour and increased in volume.
Beat in caster sugar 1 Tablespoon at a time.
Mixture at the end should look creamy white and be voluminous.
Sift flour mix over the eggs and fold in in a figure of eight motion until all flour is combined.
Divide mixture into tins and bake for 20 to 22 minutes or until firm.
Cool in baking tins.
